Summary: Celiac disease (CD), an immune-mediated systemic disorder triggered by the consumption of gluten and related prolamines, is strongly associated with the HLA-DQ2 and HLA-DQ8 genes and affecting approximately 1% of people worldwide. The unique treatment of CD consists of a dietary intervention: lifelong exclusion of gluten. A gluten-free diet is highly effective at improving symptoms of CD in the majority of patients. Nevertheless, a significant proportion remains symptomatic, and lack of strict adherence to GFD is the primary cause. For that reason, dietitians with knowledge in CD and GFD are crucial to ensure the patients adherence to diet and to avoid further complication of CD. Therefore, during this webinar, you will learn about CD and GFD: how to deal with celiac patients, how to introduce the GFD, how to plan a good and healthy GFD, how to read and understand food labeling and when and who can be beneficiated of a GFD
About the speaker: Paula Crespo-Escobar, PhD, MSc. is a dietitian working at the Coeliac Disease and Digestive Immunopathology Research Group, of Health Research Institute La Fe in Valencia (Spain). She has participated in several national and international projects related to CD, such as PREVENTCD. Moreover, she is member of the CD Special Interest Group of The European Society for Paediatric Gastroenterology Hepatology and Nutrition (ESPGHAN).
