20th FREE ENDietS webinar: Dietary modulation of oxidative stress in humans: the Red-Ox dilemma

A Knight Commander of the Italian Republic for scientific merit, A “Gusto Award” receiver, and his name is included in the top lists of the Thompson Reuters.

Professor Serafini from Italy will honor us

by presenting the first systematic reviews on the impact of plant foods on oxidative stress, attempting to unravel the “red-ox dilemma”.

A large body of evidences has shown that oxidative stress (OS) plays a significant role in the development of degenerative diseases and chronic inflammatory status.

Despite the high grade of complexity and efficiency of endogenous defenses, the mechanism is not infallible and there is a need to optimize red-ox machinery with diet.

Plant foods have been accredited of an antioxidant action in vivo. However, the extent to which they are able to tune oxidative stress and the identification of the dietary molecules involved is unclear. Moreover, the mechanism of homeostatic control of antioxidant defenses under stress condition is not clarified, contributing to raise a ‘Red-Ox Dilemma’

Professor Serafini will be presenting the first systematic reviews on the impact of plant foods on oxidative stress, attempting to unravel the “red-ox dilemma”.

Prof. Serafini is:

  • A full Professor of Human Nutrition and Head of the Functional Foods and Metabolic Stress Prevention Laboratory at Teramo University.
  • Visiting Professor at the faculty of Food Technology and Biotechnology of Zagreb University where teaches “Food, Nutrition and Health”.
  • Editor of Frontiers in Nutrition and Ecological Sustainability and Frontiers in Nutritional Immunology. Referee for many scientific journals and for Croatia, Portuguese and Italian Ministry of Science and tenour of research grants from public bodies and industries.
  • Published more than 150 IF research papers on the field of the dietary modulation of oxidative and inflammatory stress by plant foods.

Prof. Serafini has:

  • been included by Thomson Reuters in the list of international researchers displaying the greatest numbers of reports designated by Essential Science Indicators as Highly Cited Papers, ranking among the top 1% most cited for their subject field and year of publication (2002-2013). He
  • received the “Gusto Award” for the best communication in nutrition by the Council of Italian “Foreign Press”.
  • recently received the title of Knight Commander of the Italian Republic for scientific merit.
